Our Story
In 1967, my grandparents opened their own crêperie near Nantes, France. A few decades later (in 1994), I was born into a big family where good food was a way of life. Everyone took turns cooking to feed the whole household — a daily moment of joy and togetherness.
When the time came to choose a career, becoming a baker was already a quiet dream of mine. But I was encouraged to pursue broader studies and eventually turned to hospitality. Those years taught me a lot: I worked in prestigious establishments, including a Michelin-starred restaurant, where I learned precision, discipline, and respect for ingredients.
Although the intensity of that world eventually led me toward another path — software development — my love for good, honest food never left me. I’ve always found ways to share it, whether cooking for friends or volunteering as a camp cook (where I happened to meet my wife!).
When we moved to Canada in 2018, I struggled to find the kind of bread I grew up with. So I started my own sourdough, and little by little, I fell in love with natural breadmaking.
Over the years, I’ve learned to nurture it, to understand it, and to share it with friends and neighbors.
Since settling in Saint-Lazare, I’ve discovered the Moulin des Cèdres, a mill working closely with local organic farmers. And today, I finally get to live out that childhood dream — working the dough, honoring beautiful local flour, and offering our community real, simple, living bread.
This story continues with you — through every loaf that finds its way to your table — and maybe, one day, with the opening of the first bakery in Saint-Lazare.
