Our Story

In 1967, my grandparents opened their creperie near Nantes, France. Later, in 1994, I joined a large family where good, wholesome meals were part of everyday life: everyone took turns in the kitchen to feed the family, a time that was both convivial and important each day.

When it came time to choose a career, the dream of becoming a baker had already taken root. However, I was encouraged to pursue broader studies and ended up studying hospitality. Those years taught me a lot: I worked in prestigious establishments, including a Michelin-starred restaurant, where I learned rigor, precision, and respect for the ingredients.

Even though the intensity and hard work eventually led me to other paths (software development), my passion for good food never left me. I seized every opportunity to share it with my community — and it was even through a summer camp where I volunteered as a cook that I met my wife!

When I arrived in Canada in 2018, I struggled to find bread with the flavor I loved. With some time and my culinary background, I began cultivating my sourdough starter and exploring the world of natural bread. Over the years, I learned to master it and took pleasure in sharing it with friends and neighbors.

Since moving to Saint-Lazare, I discovered the Moulin des Cèdres, which works with farmers on local, organic farms. Today, I can finally fulfill my childhood dream: putting my hands in the dough, using this exceptional flour, and sharing with the community a true, simple, living bread.

The next chapter of this story is being written with you, every loaf that makes its way into your homes helping to grow this business… and who knows, maybe one day seeing the first bakery open in Saint-Lazare!
